Hey. Let me tell you about my favorite and quickest pancakes recipe I’ve been using since forever.
To be fair I don’t use exact measurements of ingredients cuz I literally just mix it by random now to create ideal consistency.
I know the American definition of pancakes is this thick circle-shaped pancakes with butter and maple syrup. But that’s not what we in Slovakia call pancake. I would say the proper translation of our pancakes would be crepes – thin pastry with different (usually sweet) toppings.
How I created this beauty:
What I used for the pastry (just approximately I did not measure all of those)
- Milk – 400ml or for my foreign readers 13.5 ounces
- Oil – sunflower oil – just like a half of a cup
- Eggs – I used two whole eggs
- Flour – 200g or like 2 full cups
- Sugar – just however much you please – recommending one cup
Mix it all. That’s it. In whatever order you like – I usually do dry ingredients first and then add liquid ones. Mix it and add more of anything you feel like it’s needed to create a creamy thick consistency.
Preheat the frying pan and add just a little bit of vegetable oil. Pour one full scoop of the dough into the pan and spread it evenly. One ladle = one pancake. Cook for couple of minutes until it’s beautifully golden and then flip to the other side. That’s all folks.
For the topping I used:
- stracciatella ice cream
- fresh strawberries
You can go wild with topping options – my favorites besides the one above are: jam, cream, mascarpone, berries, canned tangerines, cream cheese…
Also if you’re not a fan of sweet food try the salty version of this pancake by simply adding mayo, ham, cheese, vegetable… it’s delicious.
Another great tip – add vanilla, cinnamon, or another seasoning to your dough to make it special.
It’s quick, easy and you can really let your creativity and cravings loose.
